Scafario Dipping Sauce

For my housemate in Paihia

Preparation time: 10 minutes

Cooking time: About 10 minutes

Yield: About 11⁄2 cups

1⁄2 cup chunky peanut butter
1⁄4 cup lime juice
1⁄3 cup soy sauce
1⁄4 cup sesame oil
3 tablespoons sugar
1 teaspoon Chilli
1⁄4 teaspoon chilli oil
1⁄4 cup chopped fresh coriander
1⁄4 cup sliced green onions
1⁄2 cup water
1 teaspoon cornflour

1 In a saucepan, combine peanut butter, lime juice, soy sauce, sesame oil,
sugar, red pepper flakes, chile oil, cilantro, and onions.

2 Bring to a simmer over medium-low heat.

3 In a small bowl, mix water and cornflour until well blended.

4 Add the water-cornstarch mixture to the saucepan and stir until the sauce
has thickened slightly.

5 Remove from heat and let cool in the refrigerator before serving.
