Seasonal soup for the Northern Hemisphere, for February.
This is an easy no nonsense soup soup , and was tested on my Good Chums Alex & Scuba Ninja in Oz last year.
Serves 4
3 Large Onions , cut into 1/2 inch slices
1 Bulb garlic , cloves separated and peeled
565 ml [ 1 pint ] veggie or chicken stock
1 teaspoon dried thyme
25g [ 1 oz ] butter
220 ml [ 8 fl.oz ] double cream
1 tablespoon fresh parsley , chopped
Freshly ground black pepper.
Preheat Oven to 180 C / Gas 4
Place onions and garlic in a roasting tin , add 425 ml [ 3/4 pint ] of the stock sprinkle with thyme , season and dot with butter.
Cover tightly with foil and bake for 1 1/2 hours. Stirring once or twice during cooking.
The time may vary just get that caramelisation thing going and that will do, well it does for me.
Cool slightly , add remaining stock.
Blend until smooth.
Return to pan , add cream and parsley , the season to taste.
Heat gently for about 5 minutes.
Consume.

Today , I managed to go out amongst people , without getting too anxious about the numbers surrounding me.
Right for those in the know , flight is booked for my annual global trek , wherever it takes me.
I leave the UK on Sunday March 8th and return to these shores on Monday April 13th
That’s all for now , I have some more stuff to post and will update this posting later after some photo work.

I wrote a song for you today while I was sitting in my room.
I jumped up on my bed today and played it on a broom.
I didn’t think that it would be a song that you would hear,
but when I played it in my head, I made you reappear.
Been away for my birthday , away to the country all with intention of getting some game pigeon and rabbit .
I ended up starting my chums veggie plot off , I remember the days of excess at birthdays and now we manage gardens , is it the new Rock N Roll ?

Jb’s back and doing his stuff after singing with Whitney for Mandela
Well what a complete waste of a day I’ve had.
I had to go into ‘ The Office’ to try and blag some essential equipment I need for a 1-day training course tomorrow.
Mine seems to have ‘vanished’ somewhere or other.
So I had to go into the place of hell, to see if I could blag some spares.
Spent the day in music with a new widget that works on the Mac that provides all the lyrics and artwork for my I Tunes library, adds another dimension to listening to the music.
Matron is back from her travels.
Welcome home.
Chakra is trying to get ‘ on the up;
Kurt M has cut off his mullet and is on the way up with his new family members.
HKH has become HugeInMumbai.
Glad you’re all well.
Everyone is prepping themselves for Old Boys already.
Good to see.

Before I forget Hippy Burpday Matron
Whilst I was travelling I encountered many styles and flavours from all my hosts.
Japanese / Thai / Chinese / German / Aussie ???
But the wonderful sea food restaurant owned and managed by a friend of HKH called Martin was without doubt the tops.
Something I’m never likely to experience again.
So it got me thinking what can I come up with for a soup that will suit the palettes of my hosts.
Butternut Squash, Crab & Chilli is the result.
Serves 4
1 1/2 tablespoons Olive Oil
1 Medium Onion , finely chopped
1 Clove Garlic , Crushed
1 Medium Butternut Squash , roughly chopped
1 Stick Lemongrass
Pinch of Chilli Flakes
500ml veggie Stock
140ml Coconut Milk
120g ( 4 1/4 oz.. ) White Crab plus brine if using tinned
1 Tablespoon Fresh Coriander , chopped
Freshly Cracked Black Pepper
Squeeze Of Lime
Heat oil in the pan , add onion , garlic , butternut squash , cook gently approx. 10 mins.
Peel the tough outer skins of the lemongrass , bash and bruise to release the oils then add this with the chilli flakes to the pan and fry approx. 10 mins
Add the stock , bring to boil , cover and simmer gently until squash is cooked.
Cool a little and remove the lemon grass.
Blend until smooth.
Add coconut milk, crab meat and most of the coriander.
Season to taste , reheat for approx. 5 mins.
Add a squeeze of lime to taste , sprinkle with remainder of coriander and serve.
Consume.
FAO : Junya & Thomas : Maybe Kaffir Lime leaves could be added with the lemon grass.

A HDR version of Katoomba : Kato San , this is why I take 3 shots at the same time so when they are all blended they give you a HD version of an otherwise standard photo.
